Jumpstart your career in culinary with NCTC’s Culinary program. Our Occupational Skills Award (OSA) provides a foundational knowledge of basic food preparation, sanitation and food safety, and the fundamentals of baking and food characteristics. Take that skill set and apply it to a professional role as a Chef, Food Service Manager, or Recipe Developer. Each concentration track verses students in top industry practices and standards with well-respected professors who have in-depth knowledge of the trade. 

Career Outlook:

  • A Chef is tasked with monitoring sanitation practices to ensure that employees follow standards and regulations, checking the quality of raw or cooked food products to ensure that standards are met, and determining production schedules and staff requirements necessary to ensure timely delivery of services.

  • Food Service Manager would be tasked with keeping records required by government agencies regarding sanitation or food subsidies, investigating and resolve complaints regarding food quality, service, or accommodations, and maintaining food and equipment inventories, and keep inventory records.

Culinary program details

You can complete your Culinary Occupational Skills Award (OSA) at the Graham Campus through either dual credit or open enrollment and begin your career earlier in the field of Culinary Arts. At NCTC, we believe hands-on instruction provides our Culinary students with a clear understanding of safe practices and allows you to put teachings into practice with real world application. 

  • This OSA is completed through in-person classes on the Graham Campus through either dual-credit or open enrollment.

    These courses and credit hours (#) are required to earn the Culinary OSA:

    • CHEF 1301 Basic Food Prep — (3)

    • CHEF 1305 Sanitation & Safety — (3)

    • PSTR 1301 Fundamentals of Baking — (3)

    • FDNS 1301 Introduction to Foods — (3)

    Total Credit Hours — (12)
